Day 48

I threw this together for breakfast. It turned out pretty darn good.

1 Egg
3 Egg Whites
1.5 Tbsp Milk
1 oz chopped Red Bell Pepper
1 oz chopped Zuchinni
1 oz chopped Onion
4 Cherry Tomatoes, chopped
1.5 oz shredded mozarella cheese
Ground Pepper, to taste
1/2 tsp Taco Seasoning
dash salt

Preheat oven to 400 degrees
Beat egg/egg whites and milk in a medium bowl.
Add in pepper, taco seasoning and salt. Beat again.
Add vegetables.
Pour into a small ramekin
Bake 20 minutes
Remove from oven and sprinkle with cheese
Bake an additional 10-15 minutes until eggs are firm and cheese is golden
